Not so Irish stew
Ingredients
My vegan version of the classic poor man’s stew. No meat but let’s be honest it’s all about the stout and tatos here. Great with some soda bread. Enjoy!
- Potatoes
- Carrots
- Celery
- Onion
- Broccoli
- Garlic
- Fresh thyme
- Can/bottle of beer whatever you fancy but this is the flavour of the stew so a stout is always better
- Vegemite
- Pepper and salt to taste
Method
- Pre heat the oven to 180
- Grab a Romertopf or other cassarole dish
- Now portion control is really up to you here use as many or little veggies as you want based on how much stew you need but cut everything into big chunks and toss all in the dish, except for the broccoli (leave aside for later)
- Chop your garlic big and chunky or mash it however you normally like but personally in this dish the chunkier the better throw it in the dish
- Add some pepper and salt if you like
- Rip up around 6 sprigs of fresh thyme and throw in there also
- Half a teaspoon of Vegemite, in the dish it goes. Or if you prefer use some veggie stock instead or any stock for that matter
- Empty your beer into the dish
- If you prefer a thick stew then you can always add cornstarch later to thicken it up, but I reckon more liquid is the go here as you can grab some fresh chunky bread and dip away all day
- Throw it in your oven with the lid on for around 2hrs or set your oven higher and cool faster if you prefer
- In the last 20mins throw in the broccoli so it stays nice and crisp
- Thicken now if you prefer or serve up and enjoy
